Recipe: Sweet Yellow Pepper Glazed Grilled Chicken

Sweet Yellow Pepper Glazed Grilled Chicken

• 4 chicken breasts, thinly sliced
• Kosher salt & freshly cracked black pepper, to taste
• 1 recipe of the Sweet Yellow Pepper Puree (below)

1. Pre-heat your grill to high.
2. Season both sides of the chicken breasts with salt and pepper.  Spoon some of the Sweet Yellow Pepper Puree into a deep bowl.  Add a piece of chicken to the bowl.  Then spoon some more puree on top of the chicken.  Repeat this process with the rest of the chicken.  Make sure to reserve some of the puree to use a dipping sauce when the chicken is finished cooking.
3. Brush some olive oil onto the grill grates.  Add the chicken to the grill, baste with some of the puree in the bottom of the bowl, lower the heat to medium and cover the grill.  Let the chicken cook for about 2 minutes.  Turn the chicken over, baste with more puree and let it cook for another 2 to 3 minutes or until done.  Serve.  Buon Appetito! 

Note: If there is left over puree in the bowl that had the chicken in it, discard. 

Sweet Yellow Pepper Puree

• 2 cups sugar
• 1 ½ cup rice wine vinegar
• 2 dried chiles
• 2 yellow bell peppers, seeded and chopped
• Kosher salt & freshly cracked black pepper, to taste

1. Combine the sugar, vinegar and dried chiles in a saucepan.  Bring to a boil over high heat.  Let it reduce by half.
2. Add the chopped yellow peppers.  Reduce the heat to medium and cook for about 10 minutes or until the peppers are soft.  Discard the dried chiles.
3. Let the mixture cool down a bit.  Once cool add the mixture to a blender and puree until the mixture is smooth.  Season the mixture with salt and pepper.  Pour the mixture into a bowl to cool down to room temperature.  If mixture becomes too thick, you can thin it out with a little water.

Caution: When adding a hot or warm mixture to a blender use caution.  The steam that is escaping the mixture will push the top of the blender off.  Besides making a mess, if it’s hot it will burn you.
